Shrimp, Bacon & Okra Gumbo



Crisp bacon adds a smoky flavor to traditional shrimp and okra gumbo.



Makes 10 (1-cup) servings.

Prep Time: 15 minutes

Cook Time: 35 minutes


Ingredients

8 slices bacon, cut into 1-inch pieces
1/2 cup chopped celery (1-inch chunks)
1/2 cup chopped green or red bell pepper (1-inch chunks)
1/2 cup chopped onion (1-inch chunks)
6 cups water
1 package ZATARAIN'S® Gumbo Mix with Rice
2 cups frozen okra slices
1 pound medium shrimp, peeled and deveined
1/4 cup chopped green onions

Directions

1. Cook bacon in Dutch oven or large saucepan on medium-high heat until crisp. Add celery, bell pepper and onion; cook and stir 3 minutes or until vegetables begin to softened.

2. Stir in water and Rice Mix. Bring to boil. Reduce heat to low; cover and simmer 15 minutes. Add okra and shrimp; cook 10 minutes longer or until rice is tender and shrimp turn pink, stirring occasionally. Sprinkle with green onions, before serving.
