Red Bean and Andouille Soup



Start with Zatarain's® Red Beans and Rice Mix, add some vegetables and andouille and you will have flavorful soup in no time.



Makes 10 (1-cup) servings.

Prep Time: 15 minutes

Cook Time: 20 minutes


Ingredients

1 tablespoon oil
1 cup coarsely chopped celery
1 cup coarsely chopped onion
2 teaspoons minced garlic
1 cup coarsely chopped red bell pepper
1/2 teaspoon oregano leaves
7 cups water
1 package ZATARAIN'S® Red Beans and Rice
1 cup frozen corn kernels
8 ounces andouille sausage, halved lengthwise and thinly sliced
Chopped fresh cilantro (optional)
Lime wedges (optional)

Directions

1. Heat oil in large saucepot or Dutch oven on medium heat. Add celery, onion and bell pepper; cook and stir 3 minutes or until vegetables are tender. Add garlic and oregano; cook and stir 1 minute.

2. Stir in water, Rice Mix, corn and sausage; bring to boil. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.

3. Ladle into soup bowls to serve. Sprinkle with cilantro and serve with lime wedges, if desired. Serve with Creole Cheddar Cheese Corn Muffins, if desired.
