Red Bean and Andouille Soup
Start with Zatarain's® Red Beans and Rice Mix, add some vegetables and andouille and you will have flavorful soup in no time.
Makes 10 (1-cup) servings.

Ingredients

1 tablespoon oil

1 cup diced onion
|
|
1 cup diced green bell pepper
|
|
1/3 cup diced celery
|
|
7 cups water
|
|
1 package ZATARAIN'S® Red Beans and Rice
|
|
8 ounces andouille, halved lengthwise and sliced thin
|
Directions
1. Heat oil in large saucepot or Dutch oven on medium heat. Add onion, bell pepper and celery; cook and stir 5 minutes or until vegetables are tender.
2. Add water, Rice Mix and andouille; bring to boil. Reduce heat to low; cover and simmer 15 minutes, stirring occasionally.
