Red Bean and Rice Tacos



Serve this all-time favorite with typical taco toppings, or include chopped avocado, sour cream and chopped cilantro as well.



Makes 12 (2-tacos) servings.

Prep Time: 10 minutes

Cook Time: 30 minutes


Ingredients

1 pound ground beef
3 cups water
1 package ZATARAIN'S® Red Beans and Rice
1 teaspoon ground cumin
24 taco shells
Assorted toppings, such as shredded lettuce, shredded Cheddar cheese and salsa (optional)

Directions

1. Brown ground beef in large skillet on medium-high heat. Drain fat.

2. Stir in water, Rice Mix and cumin. Bring to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Stir occasionally to prevent sticking. Remove from heat. Let stand 5 minutes.

3. Spoon rice mixture into warmed taco shells. Serve with assorted toppings, if desired.

My wife and I just made this recipe. IT IS AMAZING but to heighten it, we decided to put the meat back in the rice and ad chunky salsa (so that it wouldnt dry out)!!! OUTSTANDING... it made what was already delicious PERFECT. We ended having way more than we anticipated but we are OK with that. The rice did, however, take longer to get completely done! It's a must try... next time it'll be the party dip :)

i made it with frozen chicken strips and 1 pack of taco seasoning instead of cumin.I cook for 7 including 5 kids, they loved it even the picky 5 year old.A great twist the standard, and fast for a busy household. Thanks!!!!!!
