Red Bean, Chicken and Cheese Burritos
If you are in the mood for Mexican tonight, you can make burritos easily at home with Zatarain's® Red Beans and Rice Mix, chicken, salsa, cheese and tortillas.
Makes 8 servings.

Ingredients

1 tablespoon olive oil
|
|
1 pound boneless skinless chicken breasts, cut into thin strips
|
|
3 cups water
|
|
1 package ZATARAIN'S® Red Beans and Rice
|
|
1 1/2 cups shredded Cheddar cheese, divided
|
|
1 cup salsa
|
|
8 flour tortillas (8-inch)
|
Directions
1. Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 6 minutes until cooked through. Remove chicken; set aside. Add water to same skillet; bring to boil. Stir in Rice Mix; return to boil. Reduce heat to low; cover and simmer 25 minutes or until rice is tender. Stir occasionally to prevent sticking. Remove from heat. Stir 1/2 of the cheese into rice. Let stand 5 minutes.
2. Preheat oven to 350°F. Divide rice mixture, chicken, remaining cheese and salsa among tortillas. Fold into burritos. Place in 13x9-inch baking dish.
3. Bake 10 minutes or until heated through. Serve with additional salsa, if desired.
