Creamy Chicken Stew



This easy-to-prepare chicken stew will be a new favorite for the entire family. Serve this creamy stew over freshly baked biscuits for a hearty alternative to traditional stew.



Makes 8 (1-cup) servings.

Prep Time: 15 minutes

Cook Time: 40 minutes


Ingredients

1 tablespoon oil
1 pound boneless skinless chicken thighs, cut into 1-inch cubes
1 cup baby carrots
1 cup sliced celery (1-inch pieces)
1 cup cubed onion (1-inch pieces)
4 cups water
1 package ZATARAIN'S® Gumbo Mix with Rice
1 cup heavy cream
1 cup frozen peas (optional)

Directions

1. Heat oil in Dutch oven or large saucepan on medium-high heat. Add chicken; cook and stir 6 to 8 minutes or until browned. Add carrots, celery and onion; cook and stir 3 minutes or until vegetables begin to softened.

2. Stir in water and Rice Mix. Bring to boil. Reduce heat to low. Stir in cream. Cover and simmer 20 minutes or until rice is tender, stirring occasionally. Add peas; cook 5 minutes longer. Serve over biscuits, if desired.
