Root Beer Bars with Vanilla Ice Cream



Served with vanilla ice cream, these bars are reminiscent of a root beer float.



Makes 16 servings.

Cook Time: 35 minutes


Ingredients

1 cup chopped pecans
1 cup flour
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/2 cup (1 stick) unsalted butter
2/3 cup packed brown sugar
1/4 cup granulated sugar
1 egg
1 egg yolk
1 tablespoon corn syrup
1 1/2 teaspoons ZATARAIN'S® Root Beer Extract

Directions

1. Preheat oven to 350°F. Line 8-inch square baking pan with foil, allowing foil to extend over sides of pan. Spray with no stick cooking spray. Toast pecans in pan 6 minutes or until lightly browned. Remove pecans; set aside to cool.

2. Mix flour, baking powder, baking soda and salt in medium bowl; set aside. Melt butter in large heavy saucepan on medium heat. Cook 3 minutes until lightly golden, stirring constantly. Remove from heat. Stir in sugars. Add egg, egg yolk, corn syrup and extract; mix well. Add flour mixture; stir until well mixed. Stir in pecans. Spread in prepared pan.

3. Bake 30 to 35 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack. Use foil to lift out of pan onto cutting board. Cut into bars. Serve with vanilla ice cream, if desired.
